Two-deal versus three-deal tables

A fixed-deal session in 13-card deals rummy runs a defined number of deals, commonly two or three deals per session. The chip count at the start of the session is fixed, and the chip count at the end is what gets paid out (or carried over to the next session). The cash-out math is therefore a chip-count arithmetic, not a per-deal arithmetic.
The two-deal session
A two-deal session is the shortest deals format. Each deal pays the winner the chip value of the losing seat's unmatched cards, capped at the deal ceiling. The three-deal session
A three-deal session is the longest commonly offered deals format. The same arithmetic applies, but the reader has more time to read the table and more time to be read. The variance per session is higher than the two-deal session because the chip count moves further over three deals.

Deals rummy allows a first-drop in most platforms, paying a small chip cost. The cost is published in the lobby. The cost is worth taking when the hand has no pure sequence and the backup is weak; the cost is not worth taking when the hand has a workable sequence and a strong backup.

Reading the deals-rummy lobby
What the lobby shows, and what the desk does not paraphrase.
The deals-rummy lobby shows the current stake, the current deal count, the seat availability, the deal fee, and the time-bank remaining. A reader who is choosing a table should read each of these values before sitting down. The lobby's stake is the entry fee; the deal count is the number of deals in the session; the seat availability is the number of readers currently seated; the deal fee is the per-deal commission; the time-bank is the seconds the reader has to play each hand.

The fixed-deal arithmetic differs from the points-rummy arithmetic in one important way: the chip cost of a losing show is bounded by the chip stack at the start of the session, not by a per-hand ceiling. A losing show in the first deal cannot take more chips than the losing player put on the table. A losing show in the second deal cannot take more chips than the losing player has left.
When to declare mid-deal
A reader who has built a clean hand by the second draw should consider a mid-deal declaration only when the chip swing from declaring early is small. Declaring on the second draw often catches opponents still building their hands; declaring on the second draw also signals a strong hand and warns the opponents for the next deal.
When to hold
A reader who has built a clean hand but holds two or three cards away from a perfect show should hold for one more draw, then declare. The cost of waiting one draw is small; the upside is a larger chip swing if the missing card arrives. The cost of waiting two draws is larger; the second draw should be the last draw.
